Recipe for stir-fried King oyster mushrooms

Today’s recipe is for King oyster mushrooms, also called Royal Trumpet mushroom or King Trumpet mushroom. In China, there are three principal ways to cook them: stir-fried, grilled and in salad. Here, I will share a stir-fried recipe.

Ingredient:

  • 300g trumpet mushrooms (trompettes royales)
  • 1 leek, thinly sliced
  • 1 carrot, thinly sliced
  • 1/2 garlic
  • 1/2 cup frozen peas
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon sugar
  • Salt to taste
  • Ginger (optional for added flavor)
  • Cooking oil

How to stir-fry King oyster mushrooms

Step 1 :Start by cleaning the trumpet mushrooms. Lightly brush them to remove any impurities and check for black spots on the stems. Remove any damaged parts and set them aside.

Step 2: Slice the cleaned mushrooms into thin strips. You can remove the caps and slice them separately for easier handling.

Step 3 :In a large skillet or frying pan, heat about 4 tablespoons of cooking oil over medium-high heat.

Step 4:Once the oil is hot, add the sliced garlic , ginger ,leeks and wait for them to get a slight brown color and then add carrots. Fried them together about 2-3 minutes until they start to soften.

Step 5: Add the trumpet mushroom strips to the pan. Stir-fry everything together for another 3-4 minutes until the mushrooms begin to brown and release their juices.

Step 6: In a small bowl, mix together the soy sauce, vinegar, sugar, and a pinch of salt. Pour this sauce mixture over the mushrooms and vegetables in the pan. Continue to stir-fry for another 2-3 minutes until the mushrooms are tender and the sauce has coated everything evenly.

Step 7: Add the frozen peas and stir-fry for an additional 2 minutes until they are heated through and the vegetables are cooked to your desired level of tenderness. Adjust the salt if needed.

Step 8: Once everything is cooked, remove the pan from the heat.

Serve:  stir-fried trumpet mushrooms with the cooked rice as a main course.
