Pearl Meat Balls is a one of the most beloved chinese pork recipes. Originating from Sichuan, it is also a rare famous Sichuan dish that isn’t spicy. In this dish, pork meatballs are evenly coated with sticky white rice and steamed until they shine like pearls, which is how they get there name ‘pearl meatball’

Ingredient:

  • 300 grams of ground pork (or sausage meat)
  • 100 grams of sticky rice (soaked in water for at least 3 hours)
  • 50 grams of shiitake mushrooms (diced)
  • A few pieces of ginger
  • A branch of Chinese chives (or French leek)
  • 3 tablespoons of neutral oil
  • 1 egg
  • 4 green cabbage leaves
  • Salt and pepper to taste

How to make Pearl Meat Balls

Step 1 : Prepare the Scented Oil:

Heat the neutral oil in a pan.

Add ginger and a few leaves of Chinese chives to the hot oil.

Cook until you can smell the fragrance, then remove the ginger piece.

Turn off the heat and set the scented oil aside.

Step 2 : Mix the Meat:

In a bowl, combine the ground pork with the diced shiitake mushrooms.

Add the scented oil, egg white, salt, and pepper.

Mix the ingredients vigorously until well combined.

Step 3 : Prepare the Steaming Plate:

Line the bottom of a steaming plate with the four green cabbage leaves, removing the tough parts.

Arrange them like a green carpet to create a bed for the meatballs.

Steps 4 : Form the Meatballs:

Wet your hands to prevent sticking.

Take a spoonful of the meat mixture and shape it into a small ball.

Roll the meatball in the soaked sticky rice, ensuring it’s evenly coated.

Repeat this process until you have 12 meatballs.

Step 5 : Steam the Meatballs:

Bring water in a steamer to a boil.

Carefully place the meatballs on the cabbage leaves in the steaming plate.

Cover and steam for 15-20 minutes until the meatballs are cooked through.

Step 6 : Garnish and Serve:

Finely chop the Chinese chives (or French leek).

Sprinkle the chopped chives on top of each meatball for flavor and color.

Carefully remove the meatballs from the steamer using a cabbage leaf.

Step 7 : Enjoy:

Your Chinese Pearl Meat Balls are now ready to be served.
